Found some lovely black eyed beans today which took me straight into Portuguese Childhood flavour mode.
Portuguese people love their legumes.
This salad works well with chickpeas too.
1 pound of black eyed beans
1 can of tuna
2 hard boiled eggs
handful of parsley
some lettuce-of your choice
small plum tomatoes-of your choice
extra extra virgin olive oil
white wine vinegar or lemon
Mixed dried herbs
salt and pepper to taste
-boil the beans for two hours with no seasoning
drained and cooled them well
-add the raw onion, parsley, tuna, lettuce, tomatoes, dried herbs and boiled eggs
-season with salt and pepper
-drizzle with olive oil and white wine vinegar
-coat it all well and sprinkle with some chopped parsley
-sit down and thoroughly enjoy the flavours!
