'Punched' Baked Potatoes and Roasted Mediterranean Cod

In honour of Chez What's Potato Recipe Competition and still having cravings for my baked salted cod-now well gone- I delved into my childhood flavour memories and remembered a Portuguese Potato Classic: Punched potatoes (batatas ao murro). I have no hope to compete with the delicacies presented so far but it has been fun trying!

These potatoes are baked in a Garlic infused Olive oil generous drizzle and once done, gently pressed, or 'punched' if you like, to release all the flavours. The powdery yummy potato filling absorbs the garlic flavours and takes it into a new dimension.
They are traditionally served with Baked Salted Cod:

Beef and Fava Beans Casserole

I made this dish on pure culinary instinct. No recipe, just experimenting with flavours.
It was a case of 'what's left in the freezer and cupboard before the monthly food shopping trip'

I found some Stewing beef, broad beans, carrots, onions and this was the result 3 1/2 hours later.
Tasted really delicious too.

Tuna Spaghetti with Broad Beans

And olives-very much optional, but I love them, had them in the cupboard and had to have them!

Now, broad beans or fava beans as they are known in some places in the world, are a must in Portuguese cooking, used in stews and salads.

Portuguese Roast chicken-Chicken Piri-Piri

In Portugal you see chicken being roasted on a electric spin roast constantly. They are marinated for hours previously and the spicy flavours sip into the flesh during the cooking process.

Piri Piri is the spice of preference.
This Spice gives the chicken an Amazing flavour!

Portuguese Grilled Sardines

The weather is gorgeous here in the UK at the moment!!
It's barbecue time!
Most people go for the traditional sausages, hamburgers, chicken thighs and legs. And if you're lucky, salmon!

To me, real barbecues mean the smell of fresh fish and good quality meats.
Ultimately, I starting missing Portuguese Sardines.

Here's how it works:

I was tagged by mommy gourmet. Then I was asked to post the 6 picture in the 6th folder under my pictures on my computer. Then I was to tell about the picture and tag 6 others to do the same.

The 6th picture is, ironically enough the one Portuguese recipe that was so very popular with my colleagues at work. I baked it, took into work at 8.30 and, by 8.45 there was nothing left but crumbs. My favourite bread and a favourite among some others-Portuguese Chorizo Bread.
