Mock Jamaican Corned beef and Beans Rice or What To Cook When You've Emptied Your Fridge Out

Ok, bags are packed, fridge has been emptied and I'm ready to get away from it all.

Yes my foodie friends, I'm going to hide in some corner of this world and recuperate nice and slowly!

I wont desert you though. I'll keep in touch whenever possible and I have two amazing surprise foodies guest-posting for me.

So, as I was saying, bags are packed, fridge has been emptied...hang on, no food in the fridge???

Chicken, children, blogging and Who cares?

Ok, first things first-Recipe!
This is a Portuguese inspired recipe for chicken goujons! My son loves chicken nuggets! They are very popular with children in the UK but I dont trust the ones you buy frozen in the supermarket so I make my own.

Poor FisherWoman's Stew-Homemade Seafood Stew

The very first recipe I published here was of one of my favourite dishes- Caldeirada or Seafood Stew. This is, however and, very much unfortunately, a fairly expensive dish.

I was fortunate enough to have discovered a local Fishmonger's a while ago. These are a true dying breed in the UK as the Brits are not huge fish lovers and tend to purchase their fish in the larger chain supermarkets.
I find the selection of fish in these huge places is so limited and I was thrilled to find my fishmongers.
And even more thrilled to discover it was cheaper! I bought a selection of cod, salmon, prawns and squid and it all came to £6.

Baked Spinach and Chicken Bechamel Pasta

Well, Loving Foodbuzz more and more each day!

I was fortunate enough to encounter a lovely and very helpful foodie in there, going by the name of Rouxbe-Foodie. He regularly posts Cooking School videos which I have found incredibly helpful!
His videos eventually led me to the Rouxbe site.

No Frills'Tortilla de Patatas'-Spanish Potato Omelette

Its very hot in the UK at the moment! YEAYH!!!!
In the summer, I get weird cravings for fish and end up eating nothing but fish and vegetables for 3 months!
This week I decided to plan the menus with a vegetarian/pescatarian theme.
